Cinnamic aldehyde, commonly known as Cinnamaldehyde, is an organic chemical that occurs naturally in the genus Cinnamomum as a pale yellow liquid. It has the chemical formula C9H8O and a phenyl group linked to an unsaturated aldehyde. Cinnamon bark contains 90 percent cinnamic aldehyde. Cinnamic aldehyde was extracted from cinnamon oil for the first time in 1834, and the molecule is a derivative of acrolein, the most basic unsaturated aldehyde.
It is created by steam distilling cinnamon essential oil. It may also be produced by the aldol condensation of benzaldehyde and acetaldehyde, or with the use of cinnamyl alcohol. Commercially, cinnamic aldehyde derivatives such as dihydro cinnamyl, cinnamyl alcohol, and dihydro cinnamaldehyde are employed.
