Betanin, also called Beetroot Red is primarily extracted from beets, and is a glycosidic food dye. Betanin is a betalain pigment among other betalain pigments like isobetanin, probetanin, indicaxanthin, vulgaxanthins, and neobetanin. Beet’s aglycone, acquired by hydrolyzing the glucose molecule, is betanidin. It is a food additive with E number E162.
To produce water-soluble food colors, the beetroots are pressed and diffused at a low pH value, then ultra strained to concentrate and purify. The color of betanin dye depends on pH. Between four and five values, the betanin dye corresponds to a bright bluish-red color and as the pH increases it evolves into blue-violet shades. Once the pH reaches alkaline levels, the betanin dye degrades by hydrolysis, culminating in a yellow-brown color.
